Crispy hash brown and zucchini side dish.
- 2 large potatoes, peeled and shredded
- 1 zucchini, peeled and shredded
- 1 onion, grated
- 2 egg whites
- 1/3 cup matza meal
- 1 tablespoon plus 1 teaspoon low-sodium soy sauce
- Mix everything together in a bowl.
- Coat a skillet with non-stick spray. Pour the mixture in and heat on medium until browned and crisp, turn only once.
