Ingredients

  • 1 to 2 lb. smokes sausage, cut into 1" slices
  • 3 cans black beans, drained (15 oz. each)
  • 1 1/2 c. onion, chopped
  • 1 1/2 c. green pepper, chopped
  • 1 1/2 c. celery, chopped
  • 3 cloves garlic, minced
  • 2 tsp. leaf thyme
  • 1 1/2 tsp. leaf oregano
  • 1 1/2 tsp. white pepper
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1 chicken bouillon cube
  • 5 bay leaves
  • 1 can tomato sauce (8 oz.)
  • 1 c. water
  • 3 cups hot boiled rice

Directions

  1. Brown sausage in a skillet over medium heat.
  2. Drain well and transfer to crock pot.
  3. Combine remaining ingredients in crockpot.
  4. Dover and cook on low 8 hours or on high 4 hours. Remove bay leaves.
  5. Serve over cooked rice.
