Creole Bean Soup gets its smoky flavor from a hambone.
Ingredients
- 2 cups navy beans
- 1 hambone
- 2 cups carrots, shredded
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/4 cup green pepper, chopped
- 1 teaspoon salt
- 2 cups canned tomatoes
Directions
- Soak beans overnight in 6 cups water in large saucepan.
- Add remaining ingredients except tomatoes. Simmer for 2 1/2 hours or until beans are very tender. Remove hambone. Cut ham from bone and add to soup. Mash beans. Stir in tomatoes. Simmer until hot.
