Creole Bean Soup gets its smoky flavor from a hambone.

Ingredients

  • 2 cups navy beans
  • 1 hambone
  • 2 cups carrots, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1 teaspoon salt
  • 2 cups canned tomatoes

Directions

  1. Soak beans overnight in 6 cups water in large saucepan.
  2. Add remaining ingredients except tomatoes. Simmer for 2 1/2 hours or until beans are very tender. Remove hambone. Cut ham from bone and add to soup. Mash beans. Stir in tomatoes. Simmer until hot.
