Creamy Sweet Potatoes are served with a couple of pats of butter on top. Yum!
Ingredients
- 9 medium sweet potatoes
- water
- 1/3 cup milk
- 3 tablespoons brown sugar
- 1/2 teaspoon salt
- butter, softened
Directions
- In 8 quart saucepot over high heat, heat sweet potatoes and enough water to cover to boiling. Reduce heat to medium-low; cover and cook 35 to 40 minutes until potatoes are tender; drain. Peel.
- In large bowl with mixer at low speed, beat sweet potatoes, milk, brown sugar, salt and 6 tablespoons butter until smooth, scraping bowl often with rubber spatula. Increase speed to high; beat potatoes until light and fluffy.
- Spoon potatoes into warm large bowl; top with 2 tablespoons butter.
