Spaghetti Salad is like antipasto in a bowl.
Ingredients
- 1 pound spaghetti, cooked al dente
- 1/2 cucumber, chopped
- 1 bunch radishes, sliced
- 1 bunch green onions, sliced
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 3/4 teaspoon pepper
- 1/2 teaspoon celery salt
- 1 pinch oregano
- 4 hard cooked eggs, chopped
- Salad Dressing: 4 cups mayonnaise
- 2/3 cups sour cream
- 1 cup milk
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon Dijon mustard
Directions
- Cook spaghetti in 1 tablespoons olive oil. Drain. Add remaining ingredients.
- Make dressing and mix with spaghetti mixture. Cover and refrigerate overnight.
