This creamy dressing made with freshly squeezed lime juice and finely grated lime zest works on any green salad or even topped on a baked potato.

Ingredients

1/4 cup plus 1 tablespoon mayonnaise
1 tablespoon fresh lime juice
1 teaspoon finely grated lime zest
Salt and freshly ground pepper

Directions

Place the mayonnaise, lime juice, lime zest and a few pinches of salt and pepper into a small bowl and whisk to combine. Serve immediately.
