A great vegetarian dip made with avocado, tofu, curry and fresh mint. Serve with sliced vegetables and wholegrain tortilla chips.
Ingredients
- 1 12-ounce box silken tofu
- 1 large or 2 small Hass avocados, peeled, pitted, and coarsely chopped
- 1/3 cup sour cream
- 1/3 cup plain Greek yogurt
- Zest and juice of 1 lime
- 1 garlic clove
- 2 teaspoons honey
- 1-1/2 teaspoons curry powder
- 3 tablespoons chopped mint
- Sea salt and freshly ground pepper
Directions
- Place the tofu, avocado, sour cream, yogurt, lime juice and zest, garlic, honey, curry and mint into a food processor and blend until mixture is smooth and creamy.
- Season to taste the dip with the sea salt and freshly ground black pepper, and then transfer the mixture to a dip bowl. Serve immediately as avocado will brown slightly.
