Creamy Cheddar Cheese Soup is wonderful served in a hollowed out bread bowl.
Ingredients
- 3 tablespoons butter
- 3 tablespoons carrot, grated
- 1/2 teaspoon dry mustard
- 1/4 cup milk
- 8 ounces Cheddar cheese, shredded
- 3 tablespoons onion, chopped
- 4 cups chicken broth
- 1/2 teaspoon paprika
- 2 tablespoons cornstarch
- chopped parsley for garnish
Directions
- Saute butter, onion and carrot. Stir in chicken broth and add the mustard and paprika. Simmer 15 minutes. Blend milk and cornstarch and add to the broth mixture. Cook for 5 minutes, stirring constantly. Then add cheese. Heat thoroughly and add salt and pepper to taste. Sprinkle with chopped parsley.
