Creamy Cheddar Cheese Soup

Creamy Cheddar Cheese Soup is wonderful served in a hollowed out bread bowl.


  • 3 tablespoons butter
  • 3 tablespoons carrot, grated
  • 1/2 teaspoon dry mustard
  • 1/4 cup milk
  • 8 ounces Cheddar cheese, shredded
  • 3 tablespoons onion, chopped
  • 4 cups chicken broth
  • 1/2 teaspoon paprika
  • 2 tablespoons cornstarch
  • chopped parsley for garnish


  1. Saute butter, onion and carrot. Stir in chicken broth and add the mustard and paprika. Simmer 15 minutes. Blend milk and cornstarch and add to the broth mixture. Cook for 5 minutes, stirring constantly. Then add cheese. Heat thoroughly and add salt and pepper to taste. Sprinkle with chopped parsley.
