This sweet bread serves well alongside almost any breakfast dish. Ideal as a quick grab-and-go breakfast snack for those busy morning routines, as well.
Ingredients
- 1-1/2 cups flour
- 1-1/2 cups whole wheat flour
- 1 tablespoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3 eggs
- 1 tablespoon vanilla
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 1/4 cup grated carrots
- 2 cups grated zucchini
- 1 cup dried cranberries
- 1/2 cup chopped nuts
Directions
- Combine flour, whole wheat flour, cinnamon, salt, baking powder and baking soda.
- In a separate bowl, cream eggs, vanilla, sugar, brown sugar, applesauce and vegetable oil.
- Blend flour combination into egg mixture.
- Fold in carrots, zucchini, cranberries and chopped nuts.
- Pour batter into greased loaf pans.
- Bake at 350 degrees for 1 hour.
