This sweet bread serves well alongside almost any breakfast dish. Ideal as a quick grab-and-go breakfast snack for those busy morning routines, as well.

Ingredients

  • 1-1/2 cups flour
  • 1-1/2 cups whole wheat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 eggs
  • 1 tablespoon vanilla
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 1/2 cup vegetable oil
  • 1/4 cup grated carrots
  • 2 cups grated zucchini
  • 1 cup dried cranberries
  • 1/2 cup chopped nuts

Directions

  1. Combine flour, whole wheat flour, cinnamon, salt, baking powder and baking soda.
  2. In a separate bowl, cream eggs, vanilla, sugar, brown sugar, applesauce and vegetable oil.
  3. Blend flour combination into egg mixture.
  4. Fold in carrots, zucchini, cranberries and chopped nuts.
  5. Pour batter into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.
