Try this variation of pumpkin bread at your next holiday dinner. It won't disappoint.
Ingredients
- 3-3/4 cups flour
- 3 cups sugar
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 2 teaspoons baking soda
- 1 teaspoon salt
- 4 eggs
- 1-1/2 cups canned pumpkin
- 1/2 cup vegetable oil
- 2 cups dried cranberries
- 1 cup chopped walnuts
Directions
- Mix together eggs, pumpkin and vegetable oil.
- Combine flour, sugar, cinnamon, nutmeg, baking soda and salt.
- Blend flour combination into pumpkin mixture; mix thoroughly.
- Fold in cranberries and walnuts.
- Pour batter into prepared loaf pans.
- Bake at 350 degrees for 1 hour and 20 minutes.
