Cranberries are not just for Thanksgiving.  Cranberry Cake is deliciously moist and buttery.

Ingredients

  • 2 cups cranberries
  • 3/4 cup sugar
  • 1/2 cup nuts, chopped
  • 1 cup butter, melted
  • 2 eggs
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons almond extract

Directions

  1. Butter a 10 inch pie plate. Add cranberries, chopped nuts and sugar. Melt butter. Beat eggs until light and gradually add the 1 cup sugar. Add melted butter; add flour and almond extract.
  2. Pour this mixture over cranberries. Bake at 350 degrees F for 60 minutes or until golden brown.
