Cranberry Fruit Nut Bread spread with softened cream cheese makes a great snack.
Ingredients
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoon shortening
- 1 tablespoon grated orange peel
- 3/4 cup orange juice
- 1 egg, well beaten
- 1 cup fresh cranberries, coarsely chopped
- 1/2 cup walnuts, chopped
Directions
- Mix flour, sugar, baking powder, salt and baking soda. Stir in orange juice, orange peel, shortening and egg to dry ingredients. Mix until well blended. Stir in cranberries and nuts.
- Turn into a loaf pan greased on the bottom only. Bake 55-60 minutes, until toothpick inserted in center comes out clean. Cool on rack before serving.
