These easy-to-make muffins make an excellent breakfast snack, especially during those busy morning routines.

Ingredients

  • 2 cups flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup dried cranberries
  • 2/3 cup light coconut milk
  • 1/4 cup butter, melted
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon vanilla
  • 1 egg

Directions

  1. Combine flour, sugar, baking powder and salt.
  2. In a separate bowl, beat together coconut milk, butter, grated lemon peel, vanilla and egg.
  3. Blend egg mixture into flour combination.
  4. Fold in dried cranberries.
  5. Pour batter into greased muffin tin.
  6. Bake at 400 degrees for 20 minutes.
