Ingredients
- 2 cups flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup dried cranberries
- 2/3 cup light coconut milk
- 1/4 cup butter, melted
- 1 teaspoon grated lemon peel
- 1/2 teaspoon vanilla
- 1 egg
Directions
- Combine flour, sugar, baking powder and salt.
- In a separate bowl, beat together coconut milk, butter, grated lemon peel, vanilla and egg.
- Blend egg mixture into flour combination.
- Fold in dried cranberries.
- Pour batter into greased muffin tin.
- Bake at 400 degrees for 20 minutes.
