These moist muffins compliment any breakfast dish. Top with butter or cream cheese before serving. Raisins or dried apricots can be used instead of cranberries.

Ingredients

  • 1 cup flour
  • 1/4 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 tablespoons beaten egg
  • 1/3 cup dried cranberries
  • 1/4 cup miniature chocolate chips
  • 1/4 cup chopped walnuts

Directions

  1. Mix together flour, sugar, baking powder and salt.
  2. In a separate bowl, beat orange juice, oil and egg; stir into flour mixture.
  3. Fold in cranberries, chocolate chips and walnuts.
  4. Pour batter into prepared muffin tin.
  5. Bake at 375 degrees for 20-25 minutes.
