These sweet muffins are full of flavor and healthy ingredients making them an excellent breakfast treat.

Ingredients

  • 2 cups oat bran hot cereal, uncooked
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped cranberries
  • 2/3 cup cranberry juice
  • 1/2 cup mashed bananas
  • 2 egg whites
  • 3 tablespoons applesauce

Directions

  1. Mix together cranberry juice, bananas, egg whites and applesauce; set aside.
  2. Combine oat bran, brown sugar, flour, baking powder, salt and cinnamon.
  3. Blend flour combination into banana mixture.
  4. Pour batter into prepared muffin tin.
  5. Bake at 400 degrees for 20-25 minutes.
