Chicken and vegetable stew.

Ingredients

  • 1 chicken 2 1/2-3 pounds
  • 1/2 cup flour
  • 1 teaspoons salt
  • 1/4 teaspoon pepper
  • 6 tablespoons butter
  • 6 potatoes, quartered
  • 6 onions, quartered
  • 6 carrots, sliced
  • 2 1/2 cups stewed tomatoes
  • 3 cups water

Directions

  1. Chop the chicken into serving size pieces. Roll in the salt, pepper and flour.
  2. Heat the butter in a skillet and brown the chicken.
  3. Arrange 1/2 of the vegetables in a large skillet. Place the chicken on top and top with the remaining vegetables.
  4. Pour the tomatoes and water over the vegetables. Cover and simmer for 1 1/2 hours.
