Chicken and vegetable stew.
Ingredients
- 1 chicken 2 1/2-3 pounds
- 1/2 cup flour
- 1 teaspoons salt
- 1/4 teaspoon pepper
- 6 tablespoons butter
- 6 potatoes, quartered
- 6 onions, quartered
- 6 carrots, sliced
- 2 1/2 cups stewed tomatoes
- 3 cups water
Directions
- Chop the chicken into serving size pieces. Roll in the salt, pepper and flour.
- Heat the butter in a skillet and brown the chicken.
- Arrange 1/2 of the vegetables in a large skillet. Place the chicken on top and top with the remaining vegetables.
- Pour the tomatoes and water over the vegetables. Cover and simmer for 1 1/2 hours.
