Ingredients
- 2 baking potatoes, baked
- 1 cup low-fat cottage cheese
- 1 tablespoon chives
- 1 teaspoon onion powder
Directions
- Bake the potatoes for 1 hour at 425 degrees Fahrenheit. Slice in half and scoop out the pulp. Continue baking the shell until crisp.
- Whip the potatoes with the remaining ingredients until well combined. Use the mixture to refill the potato shells and bake until heated through.
