Cottage Cheese Pancakes are great for breakfast or a late night snack.
- 1 cup flour, sifted
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar
- 4 eggs
- 1, 16 ounce container cottage cheese
- 1/3 cup milk
- Sift sifted flour with baking powder, salt and sugar.
- In large bowl, with electric mixer at medium speed, beat eggs until fluffy; now add cottage cheese, then flour mixture and milk alternately, until smooth.
- Using a 1/4 cup measuring cup or scoop, pour 1/4 cup batter into hot, lightly greased 10 inch skillet, tilting skillet to spread batter evenly over bottom of it. Cook slowly until underside is light brown, turn pancake; Cook until underside is golden. Repeat, making 10 pancakes.
