Cornmeal Yogurt Muffins are sweet and tender. Serve with butter and jam.
Ingredients
- 1 cup flour
- 3/4 cup cornmeal
- 1/3 cup sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick margarine
- 1 egg, slightly beaten
- 1 cup plain yogurt
- 1/4 cup butter, melted
Directions
- Sift first 5 ingredients. Cut in margarine. Add rest of the ingredients. Batter will be lumpy.
- Bake at 375 degrees F for 18 to 20 minutes.
