Cornmeal Yogurt Muffins are sweet and tender.  Serve with butter and jam.

Ingredients

  • 1 cup flour
  • 3/4 cup cornmeal
  • 1/3 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick margarine
  • 1 egg, slightly beaten
  • 1 cup plain yogurt
  • 1/4 cup butter, melted

Directions

  1. Sift first 5 ingredients. Cut in margarine. Add rest of the ingredients. Batter will be lumpy.
  2. Bake at 375 degrees F for 18 to 20 minutes.
