Serve Corned Beef Hash Burgers with a poached egg on top.
- 3 pounds lean corned beef brisket, cooked
- 3 tablespoons onions, finely chopped
- 2 tablespoons butter
- 3 cups boiled canned potatoes, finely diced
- dash of pepper
- butter for frying
- Grind corned beef very fine. Brown onions gently in butter. Mix corned beef well with potatoes, onions and pepper. Add a bit of cold water if mixture becomes too dry. Shape into patties. Brown in butter on both sides until hot, about 8 minutes.
