The ultimate comfort food, create this simple and rich cornbread, creamed corn, sour cream and cheddar casserole as a weeknight family favorite.
Ingredients
- 15 oz of cornbread mix
- 2 cans creamed corn
- 1 onion, chopped
- 3/4 pint sour cream
- 2 cups grated cheddar cheese
- 2 tablespoons milk
- 2 eggs
- 2 tablespoons butter
Directions
- Place the butter into a sauté pan and set over medium heat. Once melted, add the onion and sauté for 4 minutes until soft.
- In the meantime, combine the cornbread mix, milk, creamed corn, and eggs in a bowl, stir well to combine and then transfer to a 13x9-inch casserole pan.
- Top the cornbread mixture with the sour cream and then sprinkle with the sautéed onions followed by the cheddar cheese.
- Place the casserole in the oven and bake for 25 minutes. Serve immediately.
