Old fashioned corn pone recipe.

Ingredients

  • 3 cups cornmeal
  • 2 teaspoons salt
  • 1 1/4 cup boiling water
  • 1 teaspoon bacon fat
  • 2 eggs
  • 1 cup cream
  • 2 teaspoons baking powder

Directions

  1. Preheat oven to 400 degrees Fahrenheit and grease a skillet.
  2. Mix together the cornmeal, salt and bacon fat. Stir in the boiling water and mix well. Mix in the eggs and cream. Allow to cool for 1 hour. Beat in the baking powder and then pour into the greased skillet.
  3. Bake for 30-40 minutes.
