These delicious little muffins can be served with any meal.

Ingredients

  • 1 cup cornmeal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 egg, slightly beaten
  • 1 tablespoon butter

Directions

  1. Combine dry ingredients in a bowl
  2. Mix well.
  3. Stir in buttermilk, egg and butter until well blended.
  4. Coat muffin pans with non stick spray.
  5. Spoon batter into muffin pans, filling 2/3 full.
  6. Bake at 450 degrees F for 10 to 12 minutes.
