Served chilled, Conch Souse is a seafood lover's dream.
- 6 raw conch, skinned, pounded, chopped
- 3 medium tomatoes, unpeeled, sliced
- 1/4 cup lime juice
- 1 small hot red pepper, minced
- 2 cups onions, minced
- 1 cup green pepper, chopped
- 1/4 cup vinegar
- 1/2 cup olive oil
- salt and pepper to taste
- Mix all ingredients together and add salt and pepper to taste. Chill at least 8 hours.
