A savory classic, Collard Greens are a great Southern side dish.


  • 1 bunch collard greens
  • 1/2 pound of fatback or ham hocks
  • 1 green pepper, chopped
  • dash of baking soda


  1. Cut collard greens into very small pieces; wash several times. Fry fatback. Put collard greens in a pot with the green pepper and a dash baking soda. Place fatback or ham hocks on top. Cover with water and boil 60 minutes.
