Pot Roast with coffee and vegetables.

Ingredients

  • 2 1/2 pounds beef roast
  • 2 tablespoons fat
  • 1 cup water
  • 3/4 cup black coffee
  • 1 cup tomatoes, chopped
  • 1 onion, sliced
  • 5 carrots
  • 2 cups potatoes
  • salt and pepper to taste

Directions

  1. Brown all sides of the beef in the fat. Cover with the water and coffee. Sprinkle with the salt and pepper.
  2. Bring to a boil, then reduce to a simmer for 40 minutes.
  3. Add in the onions, carrots and tomatoes and simmer for 20 minutes. Add the potatoes, simmer until tender.
