Pot Roast with coffee and vegetables.
Ingredients
- 2 1/2 pounds beef roast
- 2 tablespoons fat
- 1 cup water
- 3/4 cup black coffee
- 1 cup tomatoes, chopped
- 1 onion, sliced
- 5 carrots
- 2 cups potatoes
- salt and pepper to taste
Directions
- Brown all sides of the beef in the fat. Cover with the water and coffee. Sprinkle with the salt and pepper.
- Bring to a boil, then reduce to a simmer for 40 minutes.
- Add in the onions, carrots and tomatoes and simmer for 20 minutes. Add the potatoes, simmer until tender.
