Coffee Icing will perk up any cake.
- 4 cups powdered sugar, sifted
- 4 tablespoons butter, softened
- 5 tablespoons strong coffee
- dash salt
- In a small bowl, combine the sugar, butter and salt. Beat with a mixer until blended. Add 3 tablespoons coffee and beat until smooth. Add remaining coffee a teaspoon at a time as needed for spreading consistency.
