Coffee eggnog


  • 2 eggs, separated
  • 1/3 cup sugar
  • 1/3 cup instant coffee
  • dash salt
  • 1 teaspoon vanilla extract
  • 2 cups milk, chilled
  • 3/4 cup water
  • 1 cup heavy cream, whipped
  • shaved unsweetened chocolate


  1. In a small bowl, beat egg whites on high until soft peaks form. Beat in the sugar until stiff peaks form.
  2. In a large bowl, beat egg yolks until they are lemon colored. Slowly beat in coffee, salt, vanilla, milk and water.
  3. Stir in the small bowl mixture and whipped cream, mix well.
  4. Serve well chilled , sprinkled with the chocolate shavings.
