Cod Chowder is a hearty fish stew with potatoes and carrots in a rich broth.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup onions, chopped
  • 3 cups chicken broth
  • 1 stalk celery, chopped
  • 2 carrots, chopped
  • 2 potatoes, cubed
  • 12 ounces raw cod, skinned and cut into 1 inch pieces
  • 1, 16 ounce can crushed tomatoes
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1/8 teaspoon white pepper
  • salt to taste

Directions

  1. In stockpot, melt butter and saute the onions. Add the chicken broth and bring to a boil. Add cod and vegetables and seasonings to the pot. Simmer for 20 minutes or until vegetables are tender.
