Cod Chowder is a hearty fish stew with potatoes and carrots in a rich broth.
Ingredients
- 2 tablespoons butter
- 1/2 cup onions, chopped
- 3 cups chicken broth
- 1 stalk celery, chopped
- 2 carrots, chopped
- 2 potatoes, cubed
- 12 ounces raw cod, skinned and cut into 1 inch pieces
- 1, 16 ounce can crushed tomatoes
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1/8 teaspoon white pepper
- salt to taste
Directions
- In stockpot, melt butter and saute the onions. Add the chicken broth and bring to a boil. Add cod and vegetables and seasonings to the pot. Simmer for 20 minutes or until vegetables are tender.
