This easy-to-make bread makes a cozy afternoon snack, especially alongside a hot  cup of  coffee.

Ingredients

  • 1 egg
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup shredded zucchini
  • 1/2 teaspoon vanilla
  • 1-1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 cup flaked coconut
  • 1 cup chopped nuts

Directions

  1. Beat egg, vegetable oil and sugar.
  2. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. Blend flour combination into egg mixture.
  4. Fold in zucchini, vanilla, coconut and chopped nuts.
  5. Pour batter into a greased loaf pan.
  6. Bake at 350 degrees for 1 hour.
