Beer battered coconut shrimp dinner.
- 1 cup flour
- 1 cup beer
- 1 pound medium shrimp
- 1 (14 ounce) package shredded coconut
- 1 1/2 cups vegetable oil
- Mix together the flour and beer until smooth. Dip the shrimp into the batter and then roll in the coconut.
- Heat the oil to 375 degrees Fahrenheit in a deep fryer. Fry, without crowding, until golden brown, about 2-3 batches. Drain.
