Coconut Raspberry Gems are delicious cupcakes ready for entertaining.
Ingredients
- 1 box yellow cake mix
- 2, 4 ounce cans coconut flakes
- Glaze : 1 cup seedless raspberry jam
- 1/4 cup sugar
Directions
- Prepare, bake and cool cake mix into 24 cupcakes in paper liners, according to mix directions. Remove liners from cooled cupcakes.
- Glaze: Mix sugar and jam in a small saucepan. Cook over moderate heat, stirring constantly until mixture comes to a boil. Boil 1 minute. Spread glaze over top and sides of cupcakes. Sprinkle with coconut and press gently to set the coconut.
- Place cupcakes on a wire rack to set.
