This fun version of pumpkin bread will soon become a family favorite! Consider baking a loaf to share with a friend or neighbor.
Ingredients
- 1 cup sugar
- 1 cup powdered milk
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 4 eggs
- 1-1/2 cups canned pumpkin
- 3-1/2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 2/3 cup water
- 1 cup shredded coconut
- 1 cup brown sugar
Directions
- Combine flour, powdered milk, salt, baking soda, cinnamon and nutmeg.
- In a separate bowl, cream sugar, brown sugar, vegetable oil, applesauce, eggs and pumpkin.
- Blend flour combination into pumpkin mixture.
- Fold in coconut.
- Pour batter into greased loaf pans.
- Bake at 350 degrees for 1 hour.
