This sweet bread serves well alongside almost any main dish. Consider using at holiday family gatherings. 

Ingredients

  • 3 cups flour
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 cup sour cream
  • 2 teaspoons vanilla
  • 3 cups grated zucchini
  • 2 cups crushed pineapple, drained
  • 1/2 cup flaked coconut

Directions

  1. Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  2. In a separate bowl, beat eggs, vegetable oil, sugar and brown sugar.
  3. Mix in sour cream, vanilla, zucchini, pineapple and coconut.
  4. Blend flour combination into pineapple mixture.
  5. Pour batter into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.
