These easy-to-make muffins are ideal for serving as a breakfast treat or an afternoon snack.
Ingredients
- 2-1/4 cups flour
- 2/3 cup brown sugar
- 1/2 cup flaked coconut
- 1/2 cup chopped pecans
- 1/2 cup raisins
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1-1/2 cups shredded carrots
- 2/3 cup milk
- 1/4 cup applesauce
- 1 teaspoon vanilla
- 1 egg
Directions
- Mix together milk, applesauce, vanilla and egg; set aside.
- Combine flour, brown sugar, coconut, pecans, raisins, baking powder, salt and cinnamon.
- Blend flour combination into egg mixture.
- Pour batter into prepared muffin tins.
- Bake at 375 degrees for 40-45 minutes.
