These easy-to-make muffins are ideal for serving as a breakfast treat or an afternoon snack.

Ingredients

  • 2-1/4 cups flour
  • 2/3 cup brown sugar
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans
  • 1/2 cup raisins
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1-1/2 cups shredded carrots
  • 2/3 cup milk
  • 1/4 cup applesauce
  • 1 teaspoon vanilla
  • 1 egg

Directions

  1. Mix together milk, applesauce, vanilla and egg; set aside.
  2. Combine flour, brown sugar, coconut, pecans, raisins, baking powder, salt and cinnamon.
  3. Blend flour combination into egg mixture.
  4. Pour batter into prepared muffin tins.
  5. Bake at 375 degrees for 40-45 minutes.
