Coconut Layer Cake is made from scratch.  

Ingredients

  • 2 sticks margarine, softened
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 4 eggs, separated
  • 3 cups flour, sifted
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk

Directions

  1. Cream margarine and sugar in bowl until smooth. Add vanilla and lemon flavoring, beating until fluffy. Beat in egg yolks.
  2. Sift dry ingredients together. Add dry ingredients and milk alternately, beating well after each addition. Beat egg whites until stiff but not dry. Fold into batter.
  3. Pour into 3 greased and floured 9-inch cake pans. Bake at 375 degrees F for 30 minutes or until cake tests done.
  4. Frost as desired.
