Coconut Icing is delicious over a vanilla layer cake.


  • 1 cup evaporated milk
  • 1 stick margarine
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 1/2 cup coconut, flaked


  1. Mix milk, margarine and sugar together in a saucepan and bring to a slow rolling boil. Cook until thick. Add vanilla and mix well. Remove from heat and keep stirring. Pour icing on cake while hot. Sprinkle with coconut.
