Creamy coconut cream pie from scratch. Top with meringue or whipped cream.

Ingredients

  • 3/4 cup sugar
  • 5 tablespons flour
  • pinch of salt
  • 1 3/4 cup milk
  • 4 eggs, yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 2 cups shredded coconut
  • 9 inch pie shell

Directions

  1. Combine the sugar, flour and salt with 1/4 cup of milk.
  2. Heat the remaining milk, slowly add in to the flour mixture. Continue cooking over low heat until it thickens.
  3. Mix in the beaten egg yolks and cook for 2-3 minutes. Remove from the heat.
  4. Mix in the butter, vanilla and coconut and pour into a 9 inch shell.
