Creamy coconut cream pie from scratch. Top with meringue or whipped cream.
Ingredients
- 3/4 cup sugar
- 5 tablespons flour
- pinch of salt
- 1 3/4 cup milk
- 4 eggs, yolks
- 2 tablespoons butter
- 1 teaspoon vanilla
- 2 cups shredded coconut
- 9 inch pie shell
Directions
- Combine the sugar, flour and salt with 1/4 cup of milk.
- Heat the remaining milk, slowly add in to the flour mixture. Continue cooking over low heat until it thickens.
- Mix in the beaten egg yolks and cook for 2-3 minutes. Remove from the heat.
- Mix in the butter, vanilla and coconut and pour into a 9 inch shell.
