These healthy muffins are actually quite delicious, especially alongside a hot cup of coffee.
Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 cup applesauce
- 3 eggs
- 2 teaspoons vanilla
- 1/2 cup oats
- 1/2 cup shredded coconut
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
Directions
- Combine flour, wheat flour, baking soda, baking powder, salt and cinnamon.
- In a separate bowl, mix together sugar, brown sugar, applesauce, eggs and vanilla.
- Blend flour combination into applesauce mixture.
- Fold in oats, coconut, carrots and pineapple.
- Pour batter into greased muffin tins.
- Bake at 350 degrees for 20-25 minutes.
