These healthy muffins are actually quite delicious, especially alongside a hot cup of coffee.

Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 cup applesauce
  • 3 eggs
  • 2 teaspoons vanilla
  • 1/2 cup oats
  • 1/2 cup shredded coconut
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained

Directions

  1. Combine flour, wheat flour, baking soda, baking powder, salt and cinnamon.
  2. In a separate bowl, mix together sugar, brown sugar, applesauce, eggs and vanilla.
  3. Blend flour combination into applesauce mixture.
  4. Fold in oats, coconut, carrots and pineapple.
  5. Pour batter into greased muffin tins.
  6. Bake at 350 degrees for 20-25 minutes.
