Cocktail Cherry Coconut Bars are sweet and nutty.

Ingredients

  • Crust: 1 cup flour
  • 3 tablespoons confectioner's sugar
  • 1/2 cup butter, softened
  • Filling: 2 eggs, beaten
  • 1 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 3/4 cups nuts, chopped
  • 1/2 cup coconut, shredded
  • 1/2 cup maraschino cherries, drained and quartered
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F.
  2. Make Crust: Combine flour, confectioner's sugar and butter in a medium bowl; mix well. Press into an 8 inch square baking pan. Bake 20 to 25 minutes, until lightly golden.
  3. Make Filling: Combine all ingredients in a large bowl; mix well. Spoon on top of crust and spread evenly. Bake 20 to 25 minutes, until golden brown. Cool completely on a wire rack before cutting.
