Cocktail Cheese Spinach Squares

Cocktail Cheese Spinach Squares are the perfect appetizer for entertaining.  These squares can be made ahead and stored frozen.  Just defrost and reheat when unexpected guests visit.

Ingredients

  • 3 eggs, beaten
  • 1 cup flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 16 ounce bag Monterey Jack cheese, finely shredded
  • 2 packages frozen spinach, thawed, chopped and squeezed dry

Directions

  1. Combine all ingredients and pour into a greased 9 x 13 inch pyrex baking pan. Bake at 350 degrees F for 35 minutes. Cut into bite sized squares.
