Classic Zucchini Bread is a fall favorite and great slathered with softened cream cheese.
Ingredients
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups zucchini, shredded
- 3 cups minus 3 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3 teaspoons vanilla
- 3 teaspoons cinnamon
- 1/2 cup pecans, chopped
- 1/3 cup raisins
Directions
- Preheat oven to 350 degrees F.
- Beat the eggs with the oil and sugar.
- Fold in the zucchini until well combined. In a separate bowl sift the flour, salt, soda and powder together.
- Mixing on low speed, add the flour mixture, vanilla and cinnamom to the batter and mix until combined.
- Stir in the nuts and raisins. Pour the batter into 2 standard loaf pans and bake for 60 to 70 minutes.
