Classic Zucchini Bread is a fall favorite and great slathered with softened cream cheese.

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups zucchini, shredded
  • 3 cups minus 3 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 teaspoons vanilla
  • 3 teaspoons cinnamon
  • 1/2 cup pecans, chopped
  • 1/3 cup raisins

Directions

  1. Preheat oven to 350 degrees F.
  2. Beat the eggs with the oil and sugar.
  3. Fold in the zucchini until well combined. In a separate bowl sift the flour, salt, soda and powder together.
  4. Mixing on low speed, add the flour mixture, vanilla and cinnamom to the batter and mix until combined.
  5. Stir in the nuts and raisins. Pour the batter into 2 standard loaf pans and bake for 60 to 70 minutes.
