A seafood favorite, shrimp gets hot and  in Shrimp Creole

Ingredients

  • 1 1/2 cups onion, chopped
  • 1 cup celery, chopped fine
  • 2 medium green peppers, chopped fine
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1, 15 ounce can tomato sauce
  • 1 cup water
  • 2 teaspoons parsley, minced
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 2 bay leaves, crushed
  • 14-16 ounces raw shrimp, cleaned (fresh or frozen)
  • 3 cups hot cooked rice

Directions

  1. Melt butter in a skillet. Add onion, celery, green pepper and garlic. Cook for 5 minutes or until tender. Remove from heat.
  2. Stir in tomato sauce, water and seasonings. Simmer 10 minutes. Add additional water if needed. Add shrimp, heat mixture to boiling. Cover and cook over medium heat 10-20 minutes, or until shrimp are pink and tender. Serve over rice.
