Yummy as a starter course or a light -- but filling -- meal.
Ingredients
- 1/3 cup chopped onion
- 1/3 cup chopped celery
- 1/3 cup chopped leeks
- 1 cup chicken broth
- 1 small potato, chopped
- 1 cup low-fat milk
- 1 small can of canned clams
- 1 cup shredded spinach
- Fresh nutmeg, grated
- Salt and pepper
Directions
- Saute onion, celery and leeks in a little bit of broth for about 5 minutes.
- Add in potato and the rest of the broth. Bring to a boil and simmer for 10 minutes, covered or until potato is tender.
- Add in the rest of the ingredients and cook for about 10 minutes, be sure to not boil. Serve hot.
