Yummy as a starter course or a light -- but filling -- meal.

Ingredients

  • 1/3 cup chopped onion
  • 1/3 cup chopped celery
  • 1/3 cup chopped leeks
  • 1 cup chicken broth
  • 1 small potato, chopped
  • 1 cup low-fat milk
  • 1 small can of canned clams
  • 1 cup shredded spinach
  • Fresh nutmeg, grated
  • Salt and pepper

Directions

  1. Saute onion, celery and leeks in a little bit of broth for about 5 minutes.
  2. Add in potato and the rest of the broth. Bring to a boil and simmer for 10 minutes, covered or until potato is tender.
  3. Add in the rest of the ingredients and cook for about 10 minutes, be sure to not boil. Serve hot.
