Citrus Curried Chicken & Wild Rice Salad

Serve this citrus curried chicken and wild rice dish over a bed of shredded lettuce or mixed baby greens, and garnish with some freshly diced pineapple or the fruit of your choice.


  • 1 cup wild rice
  • 1 cup shredded chicken
  • 1/2 cup regular or light mayonnaise
  • 1/3 cup fresh orange juice
  • 2 tablespoons curry powder
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1/4 cup diced pineapple


  1. Prepare the rice according to package directions, fluff with a fork and then set aside to cool slightly.
  2. Place the mayonnaise, orange juice and curry powder into a bowl and whisk vigorously until completely blended. Fold in the chicken, cashews, raisins and cooked rice and then serve immediately garnished with the diced pineapple, or place in the refrigerator for 45 minutes to chill.
