Cinnamon Sweet Potatoes

Cinnamon and brown sugar make this sweet potato recipe out of this world.


  • 2 pounds sweet potatoes, peeled and sliced
  • 1/4 cup vegetable oil
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 ground pepper


  1. Preheat oven to 375 F. Pour the oil into a 9 X 13-inch glass baking dish. Add potatoes to the oiled dish and bake for 20 minutes in the preheated oven, stirring after 10 minutes.
  2. In a small bowl, mix together the brown sugar, lemon, cinnamon, salt, and pepper. After the 20 minutes is up, remove the potatoes from the oven, and sprinkle evenly with the brown sugar mixture. Stir to coat. Return dish to the oven, and roast for another 10 minutes, or until potatoes are golden brown. Drain out the excess oil and transfer to a serving dish.
