Old fashioned cinnamon and rice muffin recipe.

Ingredients

  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 4 tablespoons sugar
  • 3 teaspoons baking powder
  • 1 cup rice, cooked
  • 3 teaspoons cinnamon
  • 1 cup milk
  • 3 eggs
  • 2 tablespoons shortening

Directions

  1. Preheat the oven to 400 degrees Fahrenheit. Grease a muffin pan.
  2. Sift together the flour, salt, sugar and baking powder. Mix in the rice, cinnamon, milk, eggs and shortening.
  3. Fill the prepared muffin tins 2/3 full. Bake for 25 minutes.
