This easy-to-make coffee cake makes a cozy breakfast snack!
Ingredients
- 2-1/4 cups flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup raisins
- 1 cup buttermilk
- 1 egg
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Directions
- Combine 2-1/4 cups flour, 1/4 cup sugar, baking powder, 1 teaspoon cinnamon, baking soda and salt; blend well.
- In a separate bowl, mix together raisins, buttermilk and egg.
- Blend flour combination into egg mixture.
- Pour batter into a greased 8x8 baking dish.
- In a small bowl, mix together remaining sugar, flour, butter and cinnamon until mixture becomes coarse; sprinkle over top of cake batter.
- Bake at 375 degrees for 25-30 minutes.
