This easy pumpkin bread makes two loaves and makes a great breakfast, snack or dessert.

Ingredients

  • 3 1/4 cups flour
  • 4 eggs
  • 2 cups pumpkin
  • 1 cup canola oil
  • 2/3 cups cold water
  • 2 1/4 cups sugar
  • 2 tsp nutmeg
  • 2 tsp cinnamon
  • 2 tsp ground cloves
  • 1 tsp salt

Directions

  1. Preheat the oven to 350 F. Grease and flour two large bread pans.
  2. In a medium-sized bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, cloves and sugar. Set aside.
  3. In a large mixing bowl, combine the eggs, pumpkin, canola oil, and water. Beat at a medium speed until well blended.
  4. Add the flour mixture a little at a time and beat at medium speed until smooth. Pour the mixture into the two bread pans.
  5. Bake for 75 minutes. Allow bread to cool for 30 minutes before removing from pan.
