This sweet and moist bread makes an excellent afternoon snack. Could also use this as a side dish at your next Thanksgiving dinner.

Ingredients

  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup sunflower seed oil
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 cup grated carrots
  • 1/2 cup chopped pecans
  • 1/2 teaspoon vanilla

Directions

  1. Beat sugar, brown sugar and sunflower oil.
  2. Combine flour, baking powder, baking soda, cinnamon and salt.
  3. Blend flour combination into sugar mixture.
  4. Beat in eggs; mix well.
  5. Fold in carrots, pecans and vanilla.
  6. Pour batter into a greased loaf pan.
  7. Bake at 350 degrees for 1 hour.
