This sweet and moist bread makes an excellent afternoon snack. Could also use this as a side dish at your next Thanksgiving dinner.
Ingredients
- 3/4 cup sugar
- 1/4 cup brown sugar
- 3/4 cup sunflower seed oil
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 eggs
- 1/4 teaspoon salt
- 1 cup grated carrots
- 1/2 cup chopped pecans
- 1/2 teaspoon vanilla
Directions
- Beat sugar, brown sugar and sunflower oil.
- Combine flour, baking powder, baking soda, cinnamon and salt.
- Blend flour combination into sugar mixture.
- Beat in eggs; mix well.
- Fold in carrots, pecans and vanilla.
- Pour batter into a greased loaf pan.
- Bake at 350 degrees for 1 hour.
